Alternately, you can try this (but Siri will completely be disabled, and not only in your AirPods)
- Open Settings
- Select Siri & Search
- Turn off “Listen for Hey Siri”, “Press Side button to Hey Siri” and “Allow Siri When Locked”

You can customize what you’d like to set by tapping twice on your AirPods. As I did, you likely had it set to enable Siri while you remained in touch with your headphones.
While you’re at it you could have created some commands. You might have used them frequently, causing Siri to notice.
